The Butifarra Fair in Jalpa de Méndez, Tabasco: gastronomic heritage, cultural identity and tourism development

Abstract

The Butifarra Fair held in Jalpa de Méndez, Tabasco, represents a gastronomic event that integrates cultural traditions, local economic activity, and tourism promotion strategies. This study analyzes the role of the festival as a mechanism for valuing gastronomic heritage and stimulating local development. Using a qualitative-descriptive approach based on participant observation, semi‑structured interviews, and documentary analysis, the research shows that the fair strengthens regional cultural identity, supports artisanal producers, and contributes to the tourism positioning of the municipality within the context of gastronomic tourism in Mexico.
